Mascarpone és ricottakrém recept – Szicíliai desszert
Mascarpone, ricotta és pisztácia – a szicíliaiak kedvenc alapanyagai, ha édességről van szó. Igaz, ők nagyon édesszájúak és mindent rettentően édesen esznek (még a spagettiba is mazsolát raknak), mi kicsit igazítottunk a recepten.
Mi ezt a krémet egy önálló desszertnek készítettük el, a szicíliaiak kandírozott gyümölcsöt is raknak bele, és cannoliba, azaz egy üreges fánkféleségbe töltik. A tokaji borokhoz általában jól illenek a túrós édességek, így a ricotta is. A ricotta úgy készül, hogy a tejsavót újra kicsapatják, és a maradék szárazanyag, egy még édesebb, még krémesebb túróféleség lesz. Magyarul, ezt nevezik ordának.
Leginkább nyáron esik jól ez az édesség, nagyon könnyű, nagyon gyors és mivel mi csak kevés cukrot teszünk bele, nagyon üdítő az íze a ricottától és a citromtól.
Annyi dolgunk van, hogy össze kell kevernünk néhány alapanyagot. 25 dkg mascarponét 50 dkg ricottával, 2-3 evőkanál cukorral és egy bio vagy kezeletlen citrom héjával keverjünk krémesre. Ezt megtehetjük robotgéppel is.
Sós pisztáciát vágjunk apróra és tehetünk a krémbe is belőle, vagy szórjuk meg a tetejét. A sós íz az édes borhoz nagyon jól fog passzolni. Mandulás keksszel vagy szintén egy olasz, a habcsókhoz hasonlító mandulás édességgel kínáljuk.

Hozzávalók a ricottás mascarpone krémhez:
25 dkg mascarpone
50 dkg ricotta
2-3 evőkanál cukor
10 dkg pisztácia
1 citrom héja
amaretti a tálaláshoz
