Ha már valaki járt a horvát tengerparton, biztosan ismeri a pljeskavicát. Bár szerb étel, azért a délszláv területeken szinte mindenhol találkozhatunk vele. Akár azt is mondhatnánk, hogy ez a balkán street foodja.
Roppant egyszerű elkészíteni, még a fasírtnál is egyszerűbb, hiszen csak pár hozzávaló szükséges csak hozzá. Viszont hagyni kell pár órát állni a hűtőben, hogy az ízek összeérjenek. De így legalább előre be tudjuk keverni, és ha grillezéshez szánjuk, akkor utána már nincs más dolgunk, mint megsütni.
Mi a pljeskavicát kétféle húsból szoktuk készíteni, sertésből és marhából, de ha minden igaz, birkát is szoktak bele tenni. Mivel ezt azért nem olyan gyakran kapni nálunk, finom lesz csak kétféle husiból is. Na de melyik részét válasszuk a disznónak meg a marhának? Lehet például lapockát, de semmiképpen ne combot vagy más hasonlóan száraz részét az állatnak. De ha igazán finomat szeretnénk enni, akkor tarját és marhanyakat használjunk hozzá.
Ami a darált húson kívül kerül bele, az a frissen őrölt bors, só, reszelt lilahagyma és kb. fél kiló húshoz egy kiskanál szódabikarbóna.
Jól keverjük el a masszát, majd mehet pihenni. Ha hűtőben pihent, akkor a sütés előtt egy vagy fél órával vegyük ki. Egy kevés olajon mindkét oldalát süssük meg serpenyőben, de grillezhetjük is.
Ajvár dukál hozzá, és egy szép kadarka. .
