Kacsamáj pástétom
A kacsamáj pástétom egy könnyen elkészíthető recept, ráadásul egyáltalán nem drága, hiszen pecsenye kacsamájból készítjük. Úgy látszik, Magyarországon egyre nő az érdeklődés a kacsahús-termékek iránt, erről a Trademagazin is írt néhány évvel ezelőtt.
Nem is csoda, a trendi libahússal szemben a kacsa húsa, valljuk be, ízletesebb, és egész baráti áron be is szerezhető. Egyes részei pedig kimondottan olcsók, ilyen például a pecsenye kacsamáj is, ami ugyanúgy felhasználható, mint a csirkemáj, és talán még ízletesebb is.
Ez a kacsamáj pástétom így készül: kb. 50-70 dkg kacsamájhoz 15-30 dkg zsírban (ki mennyire szeretné krémesre) két fej lilahagymát megfonnyasztunk. Ne spóroljuk ki a zsírt, mert nem lesz elég krémes, kenhető. Dobjunk hozzá 2 fej fokhagymát, ne többet, mert nem szeretnénk eltolni az ízét ebbe az irányba. Löttyintsünk a hagymára fél deci fehérbort, és forraljuk ki. Ajánlott testesebb, akár félszáraz vagy édes bort használni, igazán finom lesz tőle. Ha a bort kiforraltuk, jöhet a kacsamáj, amit rövid ideig, nagy lángon pirítunk, épp hogy rózsaszín legyen a közepe. Ekkor jöhet a só, bors, és egy kanál méz. Leturmixoljuk, és kihűtjük.
Olvasztott zsírral be lehet fedni később, hogy ne száradjon ki.Ezt úgy tudjuk megcsinálni, hogy a már kidermett pástétomra olvasztott zsírt öntünk, és visszatesszük a hűtőbe. A zsír elzárja az oxigéntől a pástétomunkat, így nem szárad ki a teteje, és tovább friss marad.

700 g pecsenye kacsamáj
150-300 g kacszsír
2 fej lilalhagyma
0,5 dcl bor
1-2 gerezd fokhagyma
1 evőkanál méz
só, bors
