Sült fürj recept
A fürj manapság már egyáltalán nem számít luxusnak. 600-700 Ft-ért beszerezhető,nagykerekben vagy helyi termelőktől is meg lehet vásárolni. Ha nem vagyunk torkosak, akkor egy fürj egy személynek elegendő kell, hogy legyen. Ha bármilyen ünnep alkalmával eltérnénk a megszokottól, ezt tényleg érdemes kipróbálni. Egyrészt a fürj íze semmivel össze nem hasonlítható, kicsit a vad szárnyasokhoz hasonlít. Sütve is nagyon különleges, de levesnek, vagy gyümölcsökkel megfőzve is zseniális.
Mivel szárazabb húsról van szó, a legjobb, ha bőrével együtt vesszük a fürjet, bár sok helyen nem pucolják, hanem nyúzzák őket, így a bőr adta zsírt mással kell pótolni. Mi bacont, azaz kolozsvári szalonnát használtunk, ami egyébként abszolút előnyére vált. A lényeg a lényeg, sose felejtsük el valami zsírosba bebugyolálni az állatkákat, mert húsuk nagyon kiszárad.
További előnye, hogy ezek a madarak nagyon kicsik, így nem kell órákon keresztül sütni őket. 40-45 perc alatt elkészünekl, és a fűszerezésen kívül semmi különösebb dolgunk nincs vele.
A vad szárnyasok jól bírjak az erőteljesebb fűszereket, ehhez a recepthez mi koriandert és köménymagot használtunk. Nagyon fontos, hogy ezek a fűszerek egészben legyen, mert mielőtt befűszereznénk velük a husikat, száraz serpenyőben kicsit meg kell pirítani őket. Higgyétek el, hatalmas a különbség! Éppen csak addig, hogy finoman illatozni kezdjenek. Ezután a koriandertmagot és a köménymagot egy mozsárban összetörjük, és sóval, borssal együtt a fürjekre szórjuk.
Ekkor jöhet a csomagolás. Minden madárra jusson egy kis szalonnakabátka. Süthetjük fél ideig fólia alatt, majd anélkül. Ha van bőre a fürjnek, akkor elvileg fólia nélkül is szépen meg kell sülnie, de a fóliás verzió a tuti. A sütő 170 fokra legyen beállítva.
Öntsünk kicsi vizet vagy bort is a fürjek alá. Ne sokat, mert rövid ideig tart a sütési folyamat, nem lesz ideje besűrűsödni.
