Juhtúrós lepény – lapított recept
A lapított olyan nagyis recept. Karácsonykor már annyira várjuk, hogy egy tepsinyi percek alatt eltűnik az asztalról. Jó kis böjti kaja, mondhatom. Tulajdonképpen egy kelt tésztából készült lepény, talán a kenyérlángoshoz tudnám hasonlítani, de az íze teljesen más. Egyszer majd a titkos családi receptet is megosztom veletek….talán, most egy variáció következik lapítottra és brindzára.
Kezdjük először a tésztával. Miután elég sok ideig tartott rájönnöm, milyen is a jó kelt tészta, aztán meg olyan időbeosztásban éltem, ahol nem nagyon van idő ilyesmikkel szórakozni, elkezdtem a következő, mindenki számára időspórolós módszert alkalmazni kelt tészták esetén. Erről már írtam a ciabatta recept kapcsán is. Nos, a lényeg az, hogy az időre bízunk mindent. Kb. 10 perc alatt összekeverjük a tészta hozzávalóit, aztán eltesszük hűvös helyre sok időre. Akár fél napra, vagy egy napra is. Itt a juhtúrós lepény esetében azért elég egy 4-5 óra, de persze aki hagyományosan szeretné keleszteni, 1 órán keresztül, azt is megteheti.
Egy tepsi lapítotthoz 40 dkg lisztet, kb. 2 dl aludttejet, 3/4 zacskó élesztőt, egy evőkanál cukrot, olajat és kevés sót keverünk össze egy nagyobb tálban. Aztán mehet kelni. Maradjon lágy a tészta, a kelés után a lisztes gyúródeszkán még lehet rajta igazítani. Kb. olyan legyen, mint a videóban.
Míg kel a tészta bekeverhetjük a feltétet. A brindzát, azaz a juhtúrót tejföllel, 1 gerezd fokhagymával és apróra vágott kaporral összekeverjük. Hát, csak ennyi.
Ha megkelt a tészta egy lelisztezett gyúródeszkán kicsit átgyúrjuk, kinyújtjuk, majd kiolajozott tepsire terítjük. Megkenjük a szósszal, és 180 fokon sütjük, amíg szép ropogós nem lesz a kérge.
Hozzávalók a juhtúrós lepényhez:
40 dkg liszt
1 evőkanál cukor
3/4 zacskó élesztő
1-2 evőkanál olaj
2-2,5 dl aludttej
só
1 nagy doboz tejföl
1 kocka juhtúró (brindza)
kapor, fokhagyma, bors
